Description
Covadonga, a coffee farm of 32ha, is located in the municipality of San Juan del Obispo, Antigua Guatemala region.
It sits on the fertile slopes of the Volcan de Agua at 1650-1800masl and the coffee – mostly Bourbon and Typica – is protected from the heat of the sun by shade trees.
The average temperature at this altitude is 62-83¡F and average humidity is 55-85%.
The farm supports seven permanent employees, with 25 seasonal workers helping at harvest, which here is between January and June.
The farm has recently been carrying out experiments with composting the coffee pulp in order to return nutrients and structure to the soil. As well as using it on their own farm, they have been distributing the compost to neighboring small shareholder farmers.
The cherries for this lot are rigorously sorted before being washed and dried on patios.
